2013 was an especially cold year. Casablanca was hit by extremely damaging frosts during spring and the rest of the vintage was also colder compared to the previous year, which caused a considerable delay in the ripening of the grapes. We harvested only on the 22nd of March, almost 2 weeks later then in 2012. At the winery, the bunches were selected and destemmed. Fermentation was on 2.300 liter open top tanks after a cold soak period of 4 days with a “feminine” punch downs 2 times a day. As we prefer wines that are gentle and elegant, only French used barrels were used to age during 18 months to integrate oak gracefully, showing better the lovely characteristics of the Casablanca terroir.
